Professional refractory stone
Designed and built with a pure “refractory stone” cooking surface, it maximally exploits its most important feature, that of releasing heat evenly, absorbing the moisture of the dough during cooking, thus achieving the result of baking a fragrant and crispy pizza, homemade with the same stone cooking method of the most renowned wood-fired pizzerias.
The Crosti electric oven has a food-grade refractory surface for “contact” cooking as in professional ovens.
The 13 mm refractory stone helps maintain heat and is constantly kept at temperature by the oven’s lower resistance and releases heat very slowly, avoiding immediate heat dispersion.
Ventilation system
The outer dome is made of carbon steel, a material that, combined with ceramic fiber insulation, is enriched by a ventilation system for the external cooling of the oven.
The ventilation system is designed to improve the oven’s performance and to ensure proper ventilation and heat dissipation.
