CHESTNUT CAKE RECIPE

The Chestnut cake is a typical autumnal dessert. It’s very easy to make even for beginners.

The dessert has a peasant origin. It was born in Tuscany and called Castagnaccio.

PREPARATION:

First of all, remember that chestnut flour is desirable to buy in autumn season. To recognize a good chestnut flour it is enough to taste a teaspoon and feel its sweet and almost “fragrant” flavor.

1) To start, put the raisins to soak in a large cup of hot water. In a bowl we put the 300 grams of flour by sifting them in advance.

2) Add the salt and slowly, mix the cold water with a whisk so that a fairly liquid and lump-free mixture is created. Let it rest for half an hour.

3) Fry 3 tablespoons of olive oil for 1 minute together with the sprig of rosemary in order to obtain a lightly flavored oil that you will pour onto the bottom of a rather low pan with the rosemary itself.

4) Now add all the ingredients taking care to “scatter” them on the bottom of the pan.

5) After the standing time (30 minutes) pour the chestnut flour mixture into the pan, add another 3 tablespoons of oil trying to sprinkle the cake.

6) Preheat the oven and bake for 30 – 40 minutes at 180 °. If we use a wood oven, after having heated it up (200 – 220 degrees maximum), we can bake the cake for 40 minutes. This dessert can be cooked both in traditional wood-fired ovens but also in our pizza ovens.

7) As soon as we see that cracks begin to form on the cake and that the dried fruit has turned golden, we can take our cake out of the oven.

8) Finally, let it cool for an hour. Once cold, we can serve and eat the Chestnut cake.

9) Suggestion: taste the Chestnut cake with a sour cherry wine. This is an alcoholic drink from Marche region. This pairing will be highly appreciated by the taste buds.
