Homemade Spicy barbecue sauce

INGREDIENTS SPICY BARBECUE SAUCE

  • 100cl of extra virgin olive oil
  • 40g of freshly chopped horseradish
  • A bunch of chopped tresco coriander
  • A teaspoon of coriander seeds
  • 300g of pureed tomato
  • A tablespoon of light brown sugar7
  • A pinch of salt
  • A pinch of pepper
  • 6 slices of fresh chilli
  • A chopped leek
  • A clove of garlic
  • 50cl of apple cider vinegar

SPICY BARBECUE SAUCE PREPARATION

Take a pan and sauté the leek, garlic, chilli pepper with 100cl of extra virgin olive oil, blend with the vinegar, then add all the remaining ingredients, letting everything cook until the sauce reaches a full-bodied consistency.

Pass through a colander and serve this very pungent sauce thanks to the ‘”aroma of coriander and the persistence of horseradish even with grilled fish such as mackerel, salmon, mormore or fresh prawns.
