HOMEMADE FLATBREAD RECIPE: CRESCIA MARCHIGIANA

In this article you will find all the preparation to make Flatbread.
We will explain a typical recipe from our home region (Marche – Italy). At first, Flatbread is called Crescia Marchigiana. The recipe is simple but it requires a few small tricks. To prepare a homemade Flatbread we need: Dough ingredients: – 200 grams of flour 0 for bread – 50 grams of water – 2 gr of brewer’s yeast – 4 tablespoons of extra virgin olive oil – 10 gr of fine salt – rosemary Before proceeding with the dough, it is necessary to prepare the poolish. Poolish is a very soft dough that will be used as Flatbread yeast. Poolish ingredients: – 2 g of fresh brewer’s yeast – 200 g of flour 0 – 200 g of water

1) POOLISH PREPARATION

We take 200 g of flour, 200 g of water, 2 g of yeast and mix the ingredients together in a bowl. Cover the bowl with cling film and let it ferment for 2 hour. Fermentation times change according to the amount of yeast used. A signal that will allow us to verify the maturation lies in observing its surface. When it starts to collapse we can use it. We will get a compound like this.

2) DOUGH PREPARATION

Put a little water in another bowl, and inside we dissolve the yeast in warm water. Remember NOT to add salt, otherwise you risk that the dough will not grow well.   Then we add the polish. Being very soft, we can also pour it into the bowl with a spoon.

3) DOUGH PHASE

We mix the dough and add the flour. Slowly add the flour, the dough must be elastic and soft. Now we can put the salt. When dough begins to be compact, we can stop adding flour. Now we finish the dough by hand. It is not necessary to make it too smooth, because then the leavening will allow to obtain a homogeneous dough.

4) LEAVENING PHASE

We create a ball and let it rest in a bowl for 4 hours, covering with plastic wrap. After 4 hours (as delicate as possible) let’s go and spread it on a baking sheet. Using a perforated pan, the result will be excellent. In case of using a normal pan, we can grease it and then put the Flatbread inside it. Put the Flatbread on the pan. Now we season it. A pinch of salt, a little rosemary, a drizzle of oil and let it rise again for about 30 minutes.

5) COOKING HOMEMADE FLATBREAD IN THE OVEN

The secret to have a crispy FlatBread is the correct cooking. An oven with a refractory surface has characteristics that go well with this recipe. We use Pulcinella pizza oven. Let’s bake the FlatBread at 200 degrees for about 25 minutes. In the oven there must not be an active flame but only the embers that will keep the heat constant in the cooking chamber. If we want to cook in the electric oven at home, we must preheat the static oven for 10 minutes at 180 ° C. We cook for about 40 minutes.
