Barbecue sauce for grilled lamb
Ingredients:
- 4 mint leaves
- A clove of garlic
- A pinch of salt
- A pinch of pepper
- 100cl of extra virgin olive oil
- A teaspoon of apple cider vinegar
- A teaspoon of Tabasco
- 300g of pureed tomato
- A chopped leek
PREPARATION
Dry the leek in a pan with the oil, the garlic clove and the chopped mint. Add the tomato and the rest of the ingredients. Cook until thick. Separately, you have seasoned the lamb tarts with the salt, the pepper, fennel seeds and chopped wild fennel. Cook the tarts on the barbecue, brush with the barbecue sauce and accompany them with fried artichokes and the rest of the sauce.
